Happy Friday! Let's bake some cookies!
Why not take some time this weekend to unwind, and spend time with friends and family?
Everyone has worked hard during the week and an evening of fun in the kitchen will do you good. Some of my fondest memories involve time spent with family in the kitchen. I am so grateful for these memories.
Time spent with family is always time well spent!
Below is a family favorite for us. My son-in-law, Rustin, absolutely loves these lemon cookies. Every time we bake them, it brings back memories of our family gatherings.
Lemon Cookies
One box of Lemon Cake Mix
1/3 cup of cooking oil
Two eggs
Lemon Frosting
Combine cake mix, oil, and eggs with a spoon until fully moistened.
Lighty flour your hands and roll mixture into balls.
Place on an un-greased cookie sheet.
Slightly flatten balls with bottom of glass (lightly floured).
Bake for 8 minutes at 350 degrees.
Let cool at least one minute before removing from cookie sheet.
Ice with Lemon Frosting.
Serve with a cold glass of milk.
